Winemaking and Aging
Grapes are harvested manually in the third week of September. Afetr a gentle pressiing, the
wine kept at a controlled temperature and is clarified naturally by sedimentation.
Fermentation is carried out at 61 °F. Following fermentation, the wine matures on its fine
leea for three months in Stainless Steel tanks. Bottle-aged for at least 3 months.
