Product Description

Winemaking and Aging

Grapes are harvested manually in the third week of September. After a gentle pressing, the
wine kept at a controlled temperature and is clarified naturally by sedimentation. The
primary fermentati on is carried out at 61 °F. Following fermentation, the wine matures on
its fine lees for three months in Stainless Steel tanks. A second fermentati on is carried out
in autoclaves at a low temperature (55-59° F). A final peri od of refinement sur lies
last for two months with weekly battonage

Organoleptic Characteristics

Color: pale yellow. Nose: aromas of plums, white peach and mixed citrus. Palate: fresh and
eneveloping, with substantial concentration of flavors and a persistent finish.
